Aubergine Cubes with Meatball

Yet another easy and tasty Keto recipe for this week has just arrived! There are some specific vegetables that i feel comfortable using like aubergine, broccoli, etc. Very soon will i start adding diverse ingredients into my recipes and merge them into the greatness -in the kitchen of course.

For some reason, i cannot say no to cheeses and heavy cream in my recipes for they contains high amount of fat which goes perfectly in recipes to stay on diet so they are highly featured in my recipes – though i do not mind eating them so long as the taste starts to pall on me.

Today i have something tasty for you all. Even those who are not on Keto can prefer to take a small bite from what you are seeing above -small bits of aubergine neatly cut into a tomato sauce combined with relatively bigger meatballs and cheese. So let’s start with the directions:

  • Add all the ingredients together – except cheese and make it look like a perfect dough for meatballs (it later popped up in my mind that i can use a mixture of vinegar and baking powder to make the meatballs juicier and bigger in size. I will add it on the ingredients table below)

  • Having formed the dough into meatballs, we have approximately three meatballs to cook so we lay them down on the heated pan.

  • Soon as they get cooked inside as well, we put them aside and start making the aubergine sauce on the same pan – we do not want to lose the valuable fats do we?

  • I would put the aubergine bits in the salted water before i cooked them not to absorb too much oil, but i thought it is sort of the point. We want to ingest the very amount of oil we put in the pan, i could not tolerate the leftover oil after i was done.

  • No need to overcook them since tomatoes are peeled so they exude too much water on low heat. Instead i put them on a medium heat and cooked them around 15 minutes, otherwise they would get too tired in oven.

  • Now it is time for cheese to show up and do some cheesy work! We sprinkle the grated cheese over the meatballs and aubergine sauce and we slide it into the oven that was pre-heated for 200 degree. We cook it around 10 min which is perfectly enough for previously cooked dishes.

For Meatball

15 gr ( 1 tablespoon )Tomato Paste

For topping/ filling
